			<content:encoded><![CDATA[<p>Mexico is known for its mixed cultural heritage and varying landscapes. Just outside of Mexico City is the ruins of Teotihuacan which means Place of the Gods. Visitors can explore the pyramids along the Avenue of the Dead which include the pyramids of the Sun and Moon. To the southeast, tourists can experience the splendor of the Riviera Maya and Cancun. Lush forests and cenotes dot the landscape in this region. A key landmark in this part of the country is the ruined city of Coba with the largest Mayan pyramid in Latin America. Another important Mayan<span id="more-12"></span> site is Palenque which in its day was a powerful economic center. </p>
<p>One of the most beautiful destinations in Mexico is Acapulco, the Jewel of the Pacific. It&#8217;s not just for college students on spring break. People can enjoy seafood at the many restaurants at the hotel resorts. Watching sunsets on the Pacific Ocean can be both a spiritual and romantic experience. Farther up the Pacific Coast is the beach city of Mazatlan. Travel writers consider Mazatlan as the Pearl of the Pacific. Mazatlan is the home to a large Carnival celebration annually. </p>
<p>The landscape of Mexico stretches from the dry deserts along the American border to the lush forests of the south. Mexico is truly a land with a diverse set of contrasts and contradictions.</p>

			<content:encoded><![CDATA[<p>The Aztec, Maya and Olmec people were fascinating. They were advanced technologically for their time periods and laid the foundation for many of the current advances and ways of life we have today.</p>
<p>The Aztecs lived in the central Mexico and Guatemala area hundreds of years ago. They were an agricultural people and their most important crop was corn or maize. They also had a calender similar to ours, with 365 days. The Aztec empire was based at<span id="more-11"></span> Tenochtitlan (present day Mexcio City), but the rest of the empire was made up of city-states. </p>
<p>The Mayan people lived in the southern Mexico and northern Central America areas. The Maya were known for their complete written language (the only known one in the pre-Columbian era), art, architecture, and mathematical system. Currently, six million descendants of the Maya live mainly in Mexico, Belize and Guatemala. </p>
<p>The Olmec lived in what are now the Tabasco and Veracruz states of Mexico. The Olmec were the first Mesoamerican civilization and were well-known for their art. They used jade, clay and greenstone to make statues, jars, masks and more, all with intricate details. Olmec art can be viewed in some museums.</p>
<p>These three groups of people are interesting to study and read about as they had so many similarities to life today, but many differences, as well.</p>

			<content:encoded><![CDATA[<p>There are many types of Mexican cuisine, but most of them are not for the faint of heart! Different regions have different flavors, and you&#8217;ll find that something as simple as an enchilada can vary based on the area you find it in Mexico.</p>
<p>For example, some enchiladas come in flour tortillas, are smothered in enchilada sauce and cheese, and then baked to delicious perfection. Enchiladas from another region could be made with corn tortillas, which are then dipped into the sauce and filled with meat. These type are never<span id="more-10"></span> baked and often don&#8217;t incorporate cheese at all.</p>
<p>The key to really enjoying Mexican food is to try everything! You may try a burrito from one region and think you don&#8217;t care for them, but you could absolutely love a burrito from another region. The beans and rice from one spot may be dry, while in another they&#8217;d be bordering on soup. </p>
<p>Of course, Mexican food relies heavily on sauces and condiments as well. Various guacamole and salsa flavors are often added to simple dishes. And don&#8217;t forget the hot sauce! Most authentic Mexican food will incorporate peppers, but it can vary in spice level. If you&#8217;re the type who wants everything burning hot, you can always add your own hot sauce.</p>

<p>From the lowlands and grassy plains, you can see grazing animals like the pampas deer, anteater, and maned wolf. As you move south, you can find native animals such as the cougar and the world&#8217;s smallest deer; the pudu. The wildlife along the coast is also abundant and also varies from dolphins and whales to trout. </p>

<p>Argentina also has snow-capped mountains which make as great home for the llama, fox, and the Andean Condor. With such a lush country filled with several different equatorial regions, it&#8217;s no wonder that Argentina has some of the most unique and plentiful habitats in the entire world. There are some species that are only found in Argentina as well as those found around the world, making it a great place to study the flora and fauna of many different regions while remaining in one country.</p>
