The Aztec, Maya and Olmec people were fascinating. They were advanced technologically for their time periods and laid the foundation for many of the current advances and ways of life we have today.

There are many types of Mexican cuisine, but most of them are not for the faint of heart! Different regions have different flavors, and you’ll find that something as simple as an enchilada can vary based on the area you find it in Mexico.
For example, some enchiladas come in flour tortillas, are smothered in enchilada sauce and cheese, and then baked to delicious perfection. Enchiladas from another region could be made with corn tortillas, which are then dipped into the sauce and filled with meat. These type are never (more…)

Argentina is unique in that it covers a vast amount of different landscapes providing a great look at the flora and fauna that is native to a great deal of different climates and terrain.
From the lowlands and grassy plains, you can see grazing animals like the pampas deer, anteater, and maned wolf. As you move south, you can find native animals such as the cougar and the world’s smallest deer; the pudu. The wildlife along the coast is also abundant and also varies from dolphins and whales to trout.
